The Bikini Cocktail

Yields 10 guests

Ingredients for the Citrus Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Drink (produces 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

For the Cordial: Place all the ingredients inside a saucepan, bring to a gentle boil, mixing to dissolve. After that, take off the stove and leave to reach room temperature completely. Transfer into an sterilised bottle, cap it and store in the refrigerator, where it will keep for up to four weeks.

For the Batch Mix: Combine all the liquid ingredients into one large bottle, allow it to infuse for one hour, then pass it through best through cheesecloth, so it's perfectly clear.

When ready to serve: Add 85ml of the premix into a cocktail shaker containing ice, and agitate carefully for a minute to cool it down. Pour to a chilled martini glass or equivalent, decorate with the cranberries adding the final touch with a brief mist with the mandarin essence above the glass.
